3 cans black beans
1 can diced tomatoes and green chilies
1 medium onion, finely chopped
2 tablespoons minced garlic
2 tablespoons Olive oil
Heat large frying pan. Add olive oil. Add garlic and onions and saute until onions are transparent. Add tomatoes and green chilies and cook about 5 minutes. Add beans, cover and cook for 1 hour.
Cool. Blend in food processor until smooth.
Reheat and serve warm in chaffing dish, garnished with dried parsley or cilantro. Can also be served room temperature. Best with crunchy tortilla chips.
